Ingredients
- 3 tablespoons extra-virgin oil
- 3 cups sliced leeks, white half solely

- 2 cups naked as a jaybird and julienned carrot (1 large)
- 5 dried bay leaves
- 1 stalk lemongrass, crushed with a kitchen utensil and minced
- 2 tablespoons tamari
- 1½ tablespoons recent juice
- 1 tablespoon rice vinegar
- 1-inch piece dried kombu
- Freshly ground black pepper, to taste
- 8 ounces cubed bean curd, optional
- Optional garnishes: scallions, benne seeds and/or red pepper flakes
Instructions
- In a massive pot, heat the oil over medium-high heat. Add the leeks and celery and saute till clear, concerning ten minutes. Add the garlic and ginger. Cook for one more five minutes. Add the miso, garlic powder, and onion powder and cook for one more five minutes.
- Add the vegetable broth, water, oyster mushrooms, carrots, bay leaves, lemongrass, tamari, juice, vinegar, and kombu. Mix well. bring back a boil and cook for five minutes. cut back the warmth to low and cook for one more half-hour.
- Season with freshly ground black pepper and add the bean curd, if desired. Discard the bay leaves and kombu and serve. Serve with scallions, benne seeds, and/or red pepper flakes, if desired.
